How do you know that you’ve been in lockdown too long? You’ve come up with a chocolate incarnation of banana bread. This was made in response to my youngest son’s 7am request for chocolate cake. It is deliciously moist, not very sweet and the cocoa masks the taste of the banana. We were pleasantly surprised :-)
Chocolate cake recipe - captured for posterity:
2 x eggs
70g butter
35g cocoa powder
35g sugar
220g self raising flour (half wholewheat)
1 tsp cinnamon
1 tsp vanilla essence
2tsp baking powder
1 tbsp citrus juice
5 bananas
Mush together, pop in a loaf tin and cook for 45 mins at 180 degrees centigrade
